Bengali Fried Rice, Veg Fried Rice Recipe

In a rice-based country like India, there are a lot of rice dishes that we used to prepare not just in regular days but on occasions also. Fried Rice which is also known by the name Vegetable Pulao is the most basic yet flavorful rice recipe. This healthy one-pot rice recipe is not just simple to cook but is also nutritious.

Whenever I am in a hurry, I used to prepare this simple Fried Rice. Packed with colorful veggies, this fried rice recipe or pulao recipe not only looks attractive but provides our body with the necessary vitamins.

We all know how vital it is to have some veggies included in our daily food recipes. Through this one-pot fried rice recipe you can have your hunger under control. Also, the daily veggies requirements can also be fulfilled up to some extent.

There are several variations of Fried Rice recipes in different communities. In our Bengali Fried rice recipe, we don’t use the sauce in this entire recipe. However, if you like to add some sauce you obviously can. I will tell you the steps to prepare this simple yet delicious veg fried rice recipe.

What makes a good Veg Fried Rice?

  • Unbroken grains of rice
  • Vibrantly colored veggies
  • Well cooked crunchy veggies

Ingredients :

  1. Cloves (lobongo) 4 pieces
  2. Cardamom (Elaichi) 4 pieces
  3. Cinnamon (Darchini) 1 small piece
  4. Raisins and Cashew 25 gms each
  5. Garam masala 1/2 tablespoon
  6. Bay leaves (Tej Patta) 3-4 pieces
  7. Salt and Sugar as per your taste
  8. Ghee 10 gm
  9. Veggies – Carrots 100gm, Beans 100 gm, Green Peas 50gm (if available). You can add any other vegetables of your choice and seasonal availability.
  10. Long grained Basmati Rice 300gm. You can use any other variant of long-grained rice such as Jeera rice.

How to make Veg Fried Rice Recipe?

Servings – 4,  432 Kcal per serving

  1. Soak the rice grains for about 10-15 minutes beforehand.
  2. Wash the rice properly and put it onto boiling water.
  3. Gently stir the rice often to check so that it should not be overcooked or mushy soft.
  4. The rice should be 85-90% done. Strain the rice and spread it out to dry.
  5. Meanwhile cut the veggies into whichever shape you like. You can grate them also.
  6. Take a pan and pour some ghee in it. Add bay leaves, cloves, cardamom, cinnamon, cashews, and raisins. Fry those a little bit.
  7. Add the veggies in the frying pan and fry them.
  8. Finally, add the rice grains.
  9. Add some salt and sugar as per your taste. I prefer it to be a little sweet. You can omit sugar from this recipe if you want.
  10. Mix all those very well. Make sure you do it very carefully so that the rice grains do not break.
  11. At last, add some more ghee and garam masala powder to enhance the taste. Switch off the flame.

Veg Fried Rice is ready to be served. Serve it hot with any side dish such as chilly chicken/paneer masala/chilly fish/mixed dal tadka. You can serve it with just a raita and some papad as well.

Notes

  • Make sure you use long grained rice for this veg fried rice recipe. Long rice grains not only enhance the taste but also make it look more appealing along with the colorful veggies.
  • Do not overcook the rice, otherwise the recipe will not turn out good.
  • Check continuously while cooking rice whether it is done or not.
  • You can add some green chillies to this recipe if you like it as some spicy.
  • If you don't like so much ghee, you can replace the same with any kind of Vegetable or Refined oil. But do add some ghee in the last. The aroma of ghee completes the veg fried rice recipe.
