Lassi is a classic drink made with yogurt, very popular in the Indian subcontinent. It is a traditional sweet drink in Punjab province in India. Not only in Punjab, but Lassi is also popular in almost every state of India consisting of unique recipes in each of the states.

When the summer is at the corner we cannot wait to have a cooling glass of Lassi. It is such a refreshing drink, especially in the hot sunny summer days.

Since lassi is churned out of thick yogurt or curd, it has a number of health benefits. As we all know yogurt/curd is a rich source of Calcium, thus making our bones stronger.

This is a healthy and natural remedy for stomach bloating. It contains healthy bacteria thus helps in preventing constipation and other stomach problems as well.

Including lassi in your daily diet can do wonders for your immune system as it is a rich source of lactic acid and Vitamin D, which can boost the immune system to a great extent.

There are quite a number of variations of the Lassi recipe. Some like it sweet whereas some prefer it to be salty.

The traditional Punjabi Lassi is a thickened version consisting of a thick layer of cream or ‘malai‘ on top of it. Even it also contains a thick layer of butter in it.

Although the recipe which I have shared below is a very basic one. It is super light and does not require many ingredients.

Let’s get started with the recipe.

Ingredients:

  • 500 grams Yogurt or Curd (‘Dahi’)
  • 8-10 tablespoon Sugar
  • 1-1.5 cups Chilled Water. Instead of water, you can add 5-6 Ice cubes.
  • 2 tablespoon sliced Dry Fruits such as Raisins, Cashew, Almond, Dry Dates, Pistachios, Cherries, etc.

Method of preparation of Lassi:

  1. Take yogurt in a large bowl and whisk it well with a hand blender or ‘Madani’ till it becomes smooth.
  2. Make sure no lumps remain in the yogurt.
  3. Add sugar (as per taste) in the bowl and mix it again.
  4. Add a little quantity of chilled water at this stage to balance out the consistency.
  5. Mix all the ingredients very well until the mixture becomes smooth.
  6. Pour the mixture in glasses of your choice. Garnish it with some dry fruits or nuts. Lassi is ready to be served. Serve it chilled to enjoy its refreshing goodness.

Notes

  • Use good quality thick creamy yogurt or curd to make the Lassi. 
  • You can use powdered sugar in this recipe. Powdered sugar will take less time and effort to mix well with the Lassi mixture.
  • I have used hand blender here to mix all the ingredients. You can prepare the same in Mixture Grinder/ Blender machine also. In that case just add all the ingredients in the blender one at a time along with the ice cubes. Blend it properly.
  • Several variations can be added to this recipe. You can add whatever flavor you like such as cardamom powder/saffron strands/rose water to this recipe. 
  • The lassi can be stored in the refrigerator also for 1-2 days. In that case skip adding ice cubes to it while preparing.
  • Serve the Lassi chilled to enjoy its refreshing goodness.
